A lot of people don’t think you can eat well on a small grocery budget. We spend about $350 a month on groceries, which feeds us for breakfast, lunch and dinner. We usually eat out twice a week, generally a dinner during the weekend and breakfast or lunch on Saturday or Sunday. I wanted to share with you my meal plan for the past week. All recipes are posted on the recipe page of this site. All dinners are listed. Breakfast is generally toast or a breakfast sandwich (eggs, sausage and cheese on a bagel made at home). Lunch is sandwiches or leftovers. My husband brings leftovers to work everyday so I need to make sure I have meals planned that have enough leftovers for four days of work.
Monday – Sloppy joes and fritos
Tuesday – Roast bone-in chicken breast (salt and pepper on the chicken, baked at 350 for 35-45 minutes), spaetzle noodles (see recipe page), corn and salad.
Wednesday – Sweet and sour popcorn chicken
Thursday – Shepard’s pie
Friday – Pulled pork sandwiches (pork roast in the crockpot with some BBQ seasoning, cooked on low until falling apart. Shred with a fork and add some BBQ sauce), fritos and carrot sticks.
Saturday – Tacos
Sunday – Swedish meatballs, salad
