I can’t believe it’s the end of September. Time is just flying by. It feels like we just got back from Italy and that was over three months ago.
I was so pleased with myself when I did my meal plan on Sunday night. I had it all worked out and written on the white board on the fridge. Then I realized I forgot my number one rule: Check the calendar! I forgot that we have a wedding this weekend and my husband is the best man. Therefore we will be doing a lot of wedding related things this week. I also have a few meetings this week which means I’ll need some quick dinners. I had to scrap the mean plan and start over.
I also realized that October 1 is Saturday, which means I need to get into SNAP Challenge mode. We’ll be starting on Monday rather than Saturday since we have the wedding. The Challenge says you can’t eat at a family of friend’s house or take free food from work (which I think is really silly) so we are going to start Monday. I’ve already been doing some planning and my husband is pretty excited about the recipes I’ve been setting aside.
So for this week’s plan:
Monday: Tortellini Soup and grilled cheese
Tuesday: Baked pasta with meat sauce (just mix sauce with a pound of ziti or other short pasta, put in a baking dish, over with cheese and bake for 20-30 minutes at 350 or until cheese is melted)
Wednesday: Hot Dogs and veggie sticks
Thursday: Dinner our with bride and groom
Friday: The best pancakes EVER!, sausage and juice
Saturday: Rehearsal dinner
Sunday: Wedding in the AM. If we do eat something for dinner it will most likely be hot dogs or leftovers.
