Meal plan for the week of September 5

It can’t be Monday already, can it? I just realized it about five minutes ago! Jeff and I had a great day today. We started the day having breakfast with my mother, then we had massages which we bought on Groupon. We ended the day with a great dinner at home. Not a bad Labor Day.

I also had a very productive weekend. Saturday, I spent all day making tomato sauce. Well, it did have to simmer for four hours so it seemed like all day. I am happy to report that I now have 14 quarts of tomato sauce. It was a lot of sauce, but we eat a lot of Italian food so it will save me a ton of money this summer. I paid about $22 for the produce so to end up with 14 – 32oz jars of sauce is pretty darn good. Jeff is excited for the first lasagna with the homemade sauce.

This week’s menu is going to be a little bit of comfort food. Since we are transitioning into fall, some of the heavier dishes are coming back into the menu. Mashed potatoes are back on the schedule, which makes for a very happy husband.

Monday – Mini meatloaves, mashed potatoes, pan gravy and corn (It was delicious!)

Tuesday – Spaghetti with meat sauce, salad and bread sticks

Wednesday – Breakfast for Dinner: Biscuits and gravy

Thursday – Tortellini soup with grilled ham and cheese sandwiches

Friday – Sloppy Joes with veggie sticks

Saturday – BBQ chicken, stuffing and salad

Sunday – Country fried chicken, mashed potatoes and salad

We are having a lot of salad this week because the grocery store had bagged salad on sale buy 1 get 2 free (Big Y for those of you in my area). Bagged salad is a great short cut but it’s usually very expensive. This week it was very affordable so it’s all over the menu.
