It’s Monday already? Where did last week go? Last week was really hectic and I don’t think this week is going to be any better. This week is my first week back to school. While classes don’t start until next week, I have meetings everyday this week. The first week of school is actually more hectic than a regular week for me. During the semester, I’m only on campus three days a week.
This week’s meal plan is going to have a lot of quick dinners. In addition to all my meetings during the day, I also have a few meetings in the evening. Knowing your schedule and working it into your plan makes it easier to stick to the plan so you won’t be tempted to order take-out when you realize you don’t have an hour to make dinner.
Monday – Hot dogs, baked beans and carrot sticks
Tuesday – Hamburger stroganoff, egg noodles and corn
Wednesday – Tacos, black beans and Spanish rice
Thursday – BBQ chicken, stuffing and green beans
Friday – Steak, mashed potatoes and salad
Saturday – Dinner with some friends from high school. Poor Jeff is on his own
Sunday – Baked Pasta, salad and homemade bread
Lunches this week will be leftover lasagna, which I made last night. I took pictures of the process and will be posting that sometime this week. Jeff loves lasagna and would eat it everyday if I’d let him.
